If you don’t have any leftover mince, you can make a 20-minute mince. You can either make the crispy soft egg separately or pach it in the centre of the mince, as in shakshuka. The flavors and embellishments are entirely up to you. For a fresh finish, sprinkle some spring onions on top at the end. Before or after a workout, a slice of bread with eggs and mince is a terrific way to get some great nourishment without being too rich or heavy.

Ingredients

500g lean mince

½ tsp crushed garlic

1 tsp tomato paste

½ tsp mixed herbs

1 chopped onions

1 tsp butter

100 ml water

1 tsp chopped parsley

1 cubed potato (optional)

BBQ spice

salt & pepper

Method

  • In a saucepan, heat the butter. Fry the onions and add the mince. Brown the mince.
  • Add the water. Simmer for 20 minutes on medium heat.
  • Serve on a slice of toast with a fried egg on top. Garnish with parsley.
