A fermented milk product, amasi (in Zulu and Xhosa), maas (in Afrikaans), or mafi (in Sesotho) is comparable to cottage cheese or plain yoghurt. In South Africa and Lesotho, it serves as a popular snack. I was surprised to learn that amasi is widely available in South African supermarkets. The other components of the dish may be made with little effort. Serve it with your favourite ice cream or whipped topping. Whip up some fruit and sprinkle it on top of the whipped cream to add some natural sugar and vibrant colour.

CREAMY AMASI SPONGE CAKE RECIPE

INGREDIENTS

  • For the dry ingredients.
  • 2 cups cake flour

  • 2 tsp baking powder

  • ½ tsp salt

  • 1 cup sugar

  • For the wet ingredients
  • 1 cup amasi

  • 2 eggs, beaten

  • 100 g butter or baking margarine (melted)

  • 1 tsp vanilla extract

METHOD

  • Preheat oven to 180°C.
  • In a large bowl, add all the dry ingredients and mix well.
  • In another bowl, add all the wet ingredients and mix well.
  • Pour your wet ingredients into your dry ingredients and thoroughly mix till there are no lumps.
  • Grease a cake pan and pour your mixture into the pan and bake for 20-25 minutes.
  • Let it completely cool down before cutting into wedges.

NOTES

  • Decorate cake with topping of your choice.
