INGREDIENTS

  • 250 ml whipped cream

  • 1 tin caramel Treat (360g)

  • Ten packet Tennis Biscuits

  • 1 Peppermint Crisp or mint chocolate

METHOD

  • To make this delicious dessert, start by crushing or grating the Peppermint Crisp chocolate and setting it aside.
  • Next, whisk the cream until soft peaks form, being careful not to over-whisk it.
  • In a separate bowl, mix the caramel treat with a fork until it’s smooth.
  • Then, fold the caramel and half of the crushed chocolate into the cream.
  • To assemble the dessert, layer Tennis biscuits in a square or rectangular dish or crush them and mix them with melted butter.
  • Cover the biscuits with the cream mixture, making sure that they’re all covered. Then, add a second layer of biscuits and cover again with the cream mixture.
  • Finally, sprinkle the remaining chocolate over the top.
  • It’s best to leave the dessert overnight, but if you can’t wait, you can allow it to set in the fridge for three hours.
