Prawns of any size, both fresh and frozen, may be used in this recipe. The sauce’s tangy, sweet, paprika and Tabasco spice complements the seafood well. With so many appetisers on the table, your cocktail pairs well with some fresh or warm, buttered bread. Crab meat or crayfish may be substituted in this dish without changing the flavour or the price.

Ingredients

  • 6-12 large prawns

  • 275ml cream

  • 150ml mayonnaise

  • 150ml tomato sauce

  • Worcestershire sauce

  • ½ tsp paprika

  • 1 tsp horeseradish sauce

  • ¼ tsp celery salt

  • Tabasco sauce, to taste

  • 1 tbsp. vinegar

  • fresh squeeze of lemon

Method

  • Deshell and chop prawns into bite-sized pieces.
  • Cook the prawns for a few minutes in a pan.
  • Beat the cream until thick and then add the rest of the ingredients.
  • Lightly fold in the prawns.
  • Serve cold on a bed of lettuce or in a nice glass.
  • Garnish with paprika and parsley.
